About a year ago, I saw a link to a recipe for no-bake energy bites on a friend's Facebook page.

I made them a couple of times, and this weekend I made them again with a few changes. I LOVE the taste, as well as the knowledge that they are good for my body and my baby!
Here is the recipe variation that I tried and enjoyed this weekend. My only warning is that the cookies were very crumbly. Maybe I should have used a little more of the pure maple syrup to hold them together.
Delicious, Nutritious No-Bake Cookies
1 cup old-fashioned oats
2/3 cup coconut flakes
1/2 cup almond butter
1/2 cup ground flaxseed
1/2 cup dried cherries
a small handful (maybe 2 tablespoons?) chocolate chips
1/3 cup pure maple syrup
1 tsp. vanilla extract
Mix ingredients thoroughly in a bowl. Chill in the refrigerator for a half-hour. Roll into cookie balls and enjoy!

Kate's Graduation
Last weekend we drove to Tennessee to see Ben's sister graduate with her master's degree in Sport Administration. I thought that I would share a few pictures. Congratulations, Kate! What a huge accomplishment!
